Vegan Gluten Free Pumpkin Muffins
I could not let this fall season pass without making and sharing something pumpkin related. As a member, CEO, and leader of the Lazy cook club i searched Pinterest for an easy, simple gluten free pumpkin recipes that i could share with my readers. I did not search for long when i found Alyssa from Simply Quinoa, Skinny Pumpkin Quinoa muffins. The recipe was simple enough, and muffins incredibly tasty. Serves 8 – 9 muffins
Ingredients
1 tablespoon flaxseed meal
3 tablespoons water
1/2 cup mashed banana (1 large, 2 small)
3/4 cup pumpkin puree
1/4 cup non-dairy milk
1/4 cup maple syrup
1 1/4 cup oat flour (oats ground in a blender)
1/2 cup quinoa flakes
1/2 cup blanched almond flour
1/4 cup coconut sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon vanilla bean powder (or 1 teaspoon extract)
1/2 teaspoon nutmeg
1/4 teaspoon ginger
1/4 teaspoon salt
